IL CUORE (eel-quarry) means "The Heart" in Italian. The name is a tribute to the Italian immigrants who first planted the North Coast of California to vine in the late nineteenth century. Our wines are produced from choice grapes grown in Mendocino County. We minimize oak aging to bring out the natural flavors of cherries, berries and plums in our reds and the crisp apple and ripe pear flavors of our Chardonnay! It is also our belief that one shouldn't have to pay a special occasion price to get a bottle of well made, interesting wine.
Our love of art is reflected in the label which features an original piece by Dan Rizzie, whose bold cubistic works are in the permanent collections of both The Metropolitan Museum of Art and The Museum of Modern Art in New York. The beautiful watercolor makes IL CUORE special at Valentine's, as a wedding or anniversary gift or just something nice to contemplate while enjoying a bottle.
Fresh with apple and pear flavors, complemented by floral nuances in the bouquet. Often blended with a small portion of Viognier to enhance tropical fruit aromas and add flavor complexity on the palate.
The fresh, graceful style of IL CUORE Chardonnay results from cold fermentation in small stainless steel vessels and small components of barrel fermentation in mostly neutral small oak cooperage. The gentle use of oak in our winemaking offers versatility with a wide range of foods.
IL CUORE Chardonnay is recommended with fish, shellfish, crab cakes, game birds, light pasta, vegetarian casserole and mildly spicy Asian cuisine.
This wine has a mild aroma suggesting dark cherries with a woodsy and peppery note. Medium-bodied and supple on the palate, it has pleasing flavors of ripe berries, plums and black pepper. It is a classically styled elegant wine.
IL CUORE Zinfandel will enhance a diverse range of cuisine, including comfort foods such as braised lamb shanks, roasted herbed chicken, salmon, hearty pasta dishes, burgers, pizza, and grilled meats. This is an ideal wine with flavors and natural acidity to complement “typical American”and spicy cuisine.
The bright ripe raspberry aromas and rich cane fruit flavors offer attractive complexity, similar to the celebrated Barbera d’Alba of northern Italy. The wine has dark garnet color, is smooth drinking with mouth-filling soft ripe fruit flavors. It drinks as a supple well-aged wine in its youth yet has aging potential for 5 years.
IL CUORE Barbera is recommended with lamb dishes, broiled salmon, smoked or slow grilled meat including ribs and creamy risotto. The natural acidity makes it a fine complement to aged cheeses.
This wine is carefully crafted from hand-picked Chardonnay and Pinot Noir grown in northern vineyards of Mendoncino and Sonoma Counties. The wine is made in the traditional methode champenoise process, with the second fermentation taking place in the bottle, then aged on the yeast for 1 1/2 years.
The classic medium-dry Brut sparkling wine has tiny bubbles and is straw yellow in color, with citrus, pear and floral aromas and a hint of yeast. The finish is crisp with a note of grapefruit. This non-vintage (NV) Classic Brut is produced by blending a varying percentage of reserve wines from previous vintages to produce a finished wine that has consistent flavor, character and quality.
Sparkling wines have long been paired with appetizers such as dainty servings of caviar, crab cakes, oysters, shrimp and cheeses. It also pairs well with turkey, ham and poultry dishes.
